Just bought my second Nitro. First was an under powered 2012 Z-8 with a 200HP Merc Pro XS. new boat is a 2020 Z20 Pro with a 250 pro XS and a 12 in jack plate. Still trying to figure out the chine walk.

There are some YOUTUBE videos on Chine walk. The best explanation I have seen is by Gambler Boats. Search their YOUTUBE channel.
 
First find measure your lower unit height to the bottom of your boat. Then check the height of your roster tail (should not be above the height of the motor). If it is to high try lowering the motor, or if it is to low try raising the motor .25 inches at a time. That may help take out some of the chime walk.
Most boats will have to be driven (a slight pull to the left most of the time) to keep from chime walk to attain maximum speed.
